International Commission for Uniform Methods of Sugar Analysis (ICUMSA)
Is a world-wide body which brings together the activities of the National Committees for Sugar Analysis in more than twenty member countries.
Work is carried out under various Subjects each headed by a Referee
ICUMSA is the only international organization concerned
solely with analytical methods for the sugar industry
ICUMSA methods are recognized by authorities as the Codex Alimentarius Commission, the OIML, the EU, and US Food Chemicals Codex
The ICUMSA ratings method allows
a meaningful and accurate description of the product which can be
easily understood by interested parties no matter where they come from
Details of how the status of Methods that have been established may be obtained by reading the relevant Proceedings @ (ww.icumsa.org )
L-31, M-31, S-31, L-30, M-30, and S-30 out of which maximum production is of 31 colour sugar.
(31 is the best colour standard fixed by the Government of India). Sugar grading is done for colour
and grain size. Sugar produced is regularly matched with N.S.I. standards
Icumsa 45 sugar, known today as "White Sugar", is one of the most sought after by sugar importers worldwide, due to its purity and brightness. As the highest quality sugar available on the market today, ICUMSA 45 sugar has a sparkling white color and is highly refined, suitable for human consumption and use in a wide range of food products. In addition, it has a high demand due to the fact that it is safer, since its refining process removes bacteria and contaminants present in raw sugars
Icumsa 100 (CANE Sugar) Is a refined sugar of a lower grade, has a light white color and fewer chemicals, and lower price than ICUMSA 45. It is manufactured by using a crystallization process without any chemical refining It does not posses the visual appeal of sparkling white ICUMSA 45. ICUMSA 100 is food grade sugar and safe for humans
Known today as "Crystal Sugar", it is widely used in large-scale baking and in the production of drinks and food. Formed by the crystallization process, without chemical refining, crystal sugar serves as a lower cost substitute in relation to Icumsa 45 sugar, known as traditional white sugar, even more because it contains less chemicals in its composition
Icumsa 600-1200 is 100% raw refined and is produced after the first crystallization of sugar cane.
This sugar is thicker than white sugar, known as Icumsa 45, and its color is brownish. Raw brown
sugar from sugar cane, when fully refined, contains about 70% white sugar
It is also called "Powdered Sugar" and "Confectioners' Sugar", is a finely ground sugar produced by milling granulated sugar into a powdered state. Icing sugar is also refined white sugar, but this time
it's been ground for even longer than caster sugar until a fine powder is produced.
These finely milled sweeteners are most often used in glazes and icings (which is why powdered sugar is known as icing sugar in the UK), and they dissolve much more quickly (almost instantly) and easily at room temperature than granulated sugar does, and makes for an extremely smooth texture
It usually contains between 2% and 5% of an anti-caking agent, such as cornstarch, potato starch or tricalcium phosphate, to absorb moisture, prevent clumping, and improve flow. Although most often produced in a factory, a proxy for powdered sugar can be made by processing ordinary granulated sugar in a coffee grinder, or by crushing it by hand in a mortar and pestle
VHP VHP sugar (very high polarity sugar) also known as Hi-Pol Sugar is a light brown raw sugar with a pol of more than 99.4%. ‘Pol’ is a term used to describe the percentage of sucrose present in
a mass of raw sugar. The word or term VHP is widely understood to mean that 99.4% of the total
mass of a raw sugar is pure sucrose and that 0.6% or less then this is waste material. It is used as
raw material for further procedures and designed for the refining due to its great polarization
VHP Sugar can be used for consumption, but it is normally exported to countries world wide for the production of refined sugar. This raw sugar, allows clients to renovate it into different types of sugar
for consumption. VHP sugar was first exported from Brazil in 1993 and quickly became very popular with sugar importers world wide, as it was a completely new form of raw sugar with far greater sucrose content and far less contamination than competing raw sugars. VHP is in high request as it is much cheaper and easier to refine than standard raw sugars
Beet sugar, is a refined plant of Beta vulgarise, it is a plant whose tuber contains a very high meditation of sucrose. This plant is grown typically for sugar production. Sugar Beet is a white, conical and fleshy root with a smooth crown. The plant contains of the sugar beet a rosette of leaves and roots.
Sugar is formed from the plant through a process of photosynthesis from the leaves, and then it is
stored in the roots. Sugar can characterize between 15 percent and 21 percent of the sugar beet
root’s entire weightiness; however, dependent on the growing conditions and cultivator, sugar
content can differ from 12% to above 20%.
Sugar beet grows solely in the temperate region, in contrast to sugar cane that grows entirely in the tropical and subtropical regions. The beet plant, dissimilar sugar cane, grows under the ground.
United States, France, Russia, Germany and Turkey are five largest sugar beet producers of the world's. In 2010-2011, Western Europe, Eastern Europe and North America did not produce sufficient sugar from sugar beet plant; these areas were all net traders of sugar. Sugar beet accounted for 20% of the world's sugar production.
